Healthy Banana Bread

I wanted to make August a theme month so that I could get my act together and post something every week like most people do. My mother brought home two bunches of bananas which were left to die a slow death and needed to have something done with them. I froze a bunch of them, but I also whipped up some pretty tasty recipes. They are also fairly healthy because most of the recipes I will be posting will be vegan, like this one, and will have no added sugar because bananas are already pretty sweet and adding white sugar to anything makes me cringe. Like, I don't even want to look at a bag of white sugar.

This recipe turned out really moist and slightly chewy from the added oats. This recipe is almost vegan because I used honey, but I am sure vegans who are better at being a vegan than I am know a way to get around that. This is also a really good clean eating recipe, but I used all-purpose flour because I don't have whole-wheat flour on hand, which would have been the better option. Either way, this turned out fantastic and is fairly low calorie. By my calculations, it should make 12 servings and end up around 170 calories for a slice. I also have a terrible sweet tooth and no one in this house will eat banana bread without chocolate chips in it, so those are completely optional and will cut back on all the bad stuff. But for now I will eat it in moderation and take my chances.

1. Mash the bananas in a medium-sized bowl and whisk in the honey, applesauce, vanilla, and almond milk.

Mix in the flour, oats, baking powder, baking soda, salt, cinnamon, and chocolate chips just until combined.

Put the batter in a loaf pan at 350 degrees and cook for 60-70 minutes.
