My Keto Meatloaf

My Keto Meatloaf

Here is my adapted recipe for a Keto-style Meatloaf. I'm working on that low-carb lifestyle right now, but I am also working on meal-prepping for my fiancé and I to get through the work week a little easier. Nothing too fancy; it is all pretty common ingredients except for the almond flour or pork rinds. I am a serious ketchup person, and my fiance loves a ketchup-y meatloaf, so just adjust to what your carb count will allow.

My Meatloaf. Ehh, let's face it you're not here for my photo-taking skills. Tastes better than it looks.

Nutritional facts (roughly):

Carbs 5g

Ingredients:
  • 1 tsbp. extra version olive oil
  • 1 med. onion chopped (I ended up using 1 tsp. onion powder)
  • 1 stalk celery, chopped
  • 3 cloves garlic, minced
  • 1 tsp. dried oregano
  • 1 tsp. chili powder
  • 2 lbs. ground beef
  • 1/2 cup ground up pork rinds or almond flour
  • 1/4 cup Parmesan cheese
  • 2 eggs
  • 1 tbsp. each soy sauce and Worcestershire sauce
  • Salt to taste
  • Pepper to taste
  • Ketchup
Directions:
  1. Preheat oven to 400 degrees and grease your baking dish of choice.
  2. Heat oil in pan.
  3. Add onion and celery and cook until soft (5 mins).
  4. Add garlic, oregano, & chili powder, and cook approx. 1 min until fragrant.
  5. Cool vegetable mix slightly, and add it to ground beef, flour or rinds, Parmesan cheese, eggs, and sauces with salt and pepper in a separate bowl.
  6. Add to cooking dish or form into a loaf on a baking sheet.
  7. Top with as much ketchup as your carbs allowance will let you have.
  8. Bake one hour. Can cover with aluminum foil if it looks like it is cooking too quickly.
