Peanut Butter Protein Oats

I have found a new food craving: overnight oats! I don't know what it is about them, but they are my new breakfast addiction. For people who are trying to eat right every day, it is important to eat breakfast and what is better than looking forward to what you are going to eat to keep you on the right track?

This recipe is something that I came up with one night and tastes like the perfect peanut butter cookie, but for under 300 calories and is chock full of protein! And what is even better is that you can just throw everything into a jar or little Tupperware container, stick it in the fridge, and forget about it until morning.

This recipe is vegan, has about 10 grams of protein, and is about 280 calories to get your morning started right.



1. Mix the protein powder and peanut butter together until they are well blended together. They are supposed to come together kind of like trying to cut butter into flour for pie crust. It will just be crumbly.


2. Pour in the almond milk a little at a time to make a thick paste. This is to make sure that there are no peanut butter lumps, not that that would be a bad thing, though.


3. Add in the oats, water, chocolate chips, and cinnamon and mix well. The cinnamon is optional, but it makes it taste more like a peanut butter cookie. And the chocolate is completely optional, but hey, chocolate in the morning makes me happy.


4. Stick it in the fridge and try to wait until morning!


Peanut Butter Protein Overnight Oats
You will need:
1/3 cup Rolled Oats
1/3 cup Almond Milk plus 1/3 cup Water
1/2 scoop Vanilla Protein Powder
1 Tablespoon Peanut Butter
1 Tablespoon Semisweet Chocolate Chips (optional)
Cinnamon (optional)

3. Add in the oats, water, chocolate chips, and cinnamon and mix well.
4. Stick it in the fridge and try to wait until morning!
