My Keto Meatloaf
Here is my adapted recipe for a Keto-style Meatloaf. I'm working on that low-carb lifestyle right now, but I am also working on meal-prepping for my fiancé and I to get through the work week a little easier. Nothing too fancy; it is all pretty common ingredients except for the almond flour or pork rinds. I am a serious ketchup person, and my fiance loves a ketchup-y meatloaf, so just adjust to what your carb count will allow.

Ingredients:
- 1 tsbp. extra version olive oil
- 1 med. onion chopped (I ended up using 1 tsp. onion powder)
- 1 stalk celery, chopped
- 3 cloves garlic, minced
- 1 tsp. dried oregano
- 1 tsp. chili powder
- 2 lbs. ground beef
- 1/2 cup ground up pork rinds or almond flour
- 1/4 cup Parmesan cheese
- 2 eggs
- 1 tbsp. each soy sauce and Worcestershire sauce
- Salt to taste
- Pepper to taste
- Ketchup
Directions:
- Preheat oven to 400 degrees and grease your baking dish of choice.
- Heat oil in pan.
- Add onion and celery and cook until soft (5 mins).
- Add garlic, oregano, & chili powder, and cook approx. 1 min until fragrant.
- Cool vegetable mix slightly, and add it to ground beef, flour or rinds, Parmesan cheese, eggs, and sauces with salt and pepper in a separate bowl.
- Add to cooking dish or form into a loaf on a baking sheet.
- Top with as much ketchup as your carbs allowance will let you have.
- Bake one hour. Can cover with aluminum foil if it looks like it is cooking too quickly.
